The anaerobic fermentation process highlights the acidity and fruit notes usually found in Bale Mountain coffees. This lovely coffee is grown in the West Arsi, Oromia a tricky to reach location where growing coffee is less common than other areas of the South of Ethiopia . Widely considered the birth place of coffee, 98% of Ethiopian coffee is still produced by smallholder farmers today.
Israel Degfa, the producer focuses on sustainability programs and works tirelessly developing better quality coffee and giving back to the local communities. The varieties are referred to as Ethiopian Heirloom, which is a mix of local native Typica hybrids, and new and improved varieties of old strains.
The coffee collected from the farm is notably dense and uniform, consistently delivering a high-quality cup profile. Bale Mountain farm is also engaged in social responsibility activities like local road construction, nursery establishment and free distribution of coffee seedlings, school building and financial support during the off season.
