About this awesome coffee -

Tastes like: Mandarin, Caramel, Bourbon
Mountain: 2,300 MASL
Variety: Red Bourbon
Process: Speedy Lactic Natural
Producer: Gabriel Cortes

Roaster notes: "Gabriel's coffee is a firm favourite here with the Carnival team.  This coffee will not disappoint, with caramel sweetness, mandarin acidity and a bourbon deepness.  This coffees compexity is mind blowing and we discover something new every time we drink it.  This coffee is best enjoyed filtered, brewed with your Aero Press or cafetiere".

Over the Mountain in La Sierra Neighbourhood, Commune 8 of Medellin, there is El Tractor farm.  Don Gabriel Cortes has the highest grown and also one of the highest scored coffees in the area.  His red bourbon variety if legendary and recently won the best coffee cupped in Medellin award and the 4th place in the Master of Cafe Colombia.

The coffee is grown high up in La Sierra, Medellin at over 2,300 meters above sea level.  He has been a farmer since he was a child however, like many in the mountains above the Aburra Valley, Don Gabriel is a survivor.  He came to La Sierra displaced from his farm in Begachi by violence in the region more than 16 years ago.

This special coffee has a cup score of 88.  This is a special batch with an experimental fermentation process. The quick lactic fermentation allows for the growth of lactic acid bacteria under anaerobic conditions with oxygen restriction and high temperature.  The bacteria feed on the sugar present in the mucilage, generating a high concentration of lactic acid.  After reaching the desired PH level, the coffee is washed in clean water to stop the growth of bacteria and sun dried on patios and drying beds until 11% humidity.

This coffee has been imported by our ethical importer partners, Colombian Artisan Coffee who paid to the farmer 250% more than the coffee market price.
