Roaster notes: "We love this coffee, and we love a honey process and the exciting challenge it gives us as roasters. Steve has totally smashed the development and roasting of this one. This coffee is sweet and syrupy, with notes of honey, mandarin and an intense jaminess. We can't stop drinking this coffee made with our V60, Aero Press and Cafetiere".
The Diaz Family is an incredible group of coffee growers. They are committed to quality and excellence The family owns 3.5 hectares of land. Each member of the family owns their own part of the farm. They are supported by the same team and have a rotational plan in place.
The Honey process is considered a hybrid of the washed and natural process A process which has become very popular in El Salvador. In this method, the coffee is mechanically de-pulped, removing the skin and some of the fruit flesh surrounding the beans. The coffee is then dried on patios or raised beds.
The Pacamara coffee variety is nicknamed the Elephant bean due to the large size of the coffee bean. This coffee is big in bean and big in sweet flavour.
