Roaster notes: "This coffee has to be tried with a tropical sweetness, vanilla smoothness and sticky strawberry jam finish. A delightful experimental coffee that works best with gentler filter brewing methods".
This lovely coffee is grown on La Pama farm in Huila, Colombia. The total size of the farm is just 8 hectares. As well a growing bourbon Aji, they also grow caturra, pink and red bourbon coffee varieties.
Ledy and Luis are a husband and wife team, who run La Pama farm with their children. Through their consistent and passionate work they have been able to able to increase the quality of the coffee year on year.
The coffee variety name, Bourbon Aji comes from the producer thinking it was similar to a bourbon and Aji, because when you taste the mucilage of the coffee cherry, it is spicy like a pepper. Aji in Colombia is also a traditional hot sauce.
The Bourbon Aji variety originated on Jose Herman Salazar's coffee farm. Jose noticed that the coffee trees were behaving differently from the other coffee trees. A sample was taken and processed and cupped. It had a distince profile and the bourbon Aji coffee variety was born. Jose then went onto kindly share this exciting new coffee variety with other local producers, the rest is history.
