Elias and Shady aren't just coffee enthusiasts; they're on a mission to improve the lives of the hardworking families on their estate. Their secret weapon? A touch of wizardry in the form of a unique fermentation technique using Aspergillus Oryzae.

Developed in collaboration with Kaapo Paavolainen, this innovative process enhances the flavour and quality of their coffee, creating a brew that's truly enchanting.

Here's how the magic happens:

• Cultivating the Magic: Aspergillus Oryzae, a flavour-enhancing fungus, is grown on steamed rice.
• The Alchemist's Touch: The rice is harvested, dried, and ground into a fine powder, then sprinkled over the coffee cherries.
• Transformation: Over 24-72 hours, the fungus works its magic, enhancing the cherries' flavour complexity.
• Preserving the Enchantment: The cherries are carefully sun-dried and then mechanically dried at a controlled temperature to preserve their delicate characteristics.
• A Gift of quality: The beans are stabilized in GrainPro bags, ensuring optimal complexity & quality.
