Roaster notes: " A lovely, sweet coffee with awesome notes of chocolate, caramel and sweet forest fruits.  This coffee is a great example of a classic Colombian coffee, with deep notes of chocolate and a rich aftertaste. An excellent partner with milk too. We are enjoying this coffee as an espresso and flat white".

This coffee is grown in the beautiful region of Huila, close to the famous archaeological park in San Augustin.  The park contains the largest collection of religious monuments and megalithic sculptures in Latin America and is considered the world's largest necropolis, a UNESCO World Heritage Site.  Farms in this region are typically between 0.5 and 10 hectares in size and sit at a towering 1,650 to 1,900 meters above sea level.

Coffee is processed on individual farms. On the farm, farmers float cherry to remove any underripe cherry. Then, they pulp cherry and ferment it in tiled tanks for 16 to 24 hours. Following fermentation, the wash parchment in clean water and lay it to dry on patios, elbas (the flat roofs of their houses) or marquesinas. They rake parchment frequently to ensure even drying. It takes approximately 15 days for parchment to dry. Once dry, farmers deliver their parchment to the mill in Palermo, Huila where it is blended, hulled and prepared for export.
