Roaster notes: " This coffee is super delightfully floral, with fruity notes of soft stone fruit and a deliciate caramel sweetness. Complex and funky, this is one not to be missed".
The Kayon Mountain coffee Farm is in the region of Oromia in Ethiopia.
The farm is located in the town of Shakiso in the Guji Zone of the Oromia Region. This is a remote place with beautiful forests. The soil is incredibly fertile and ripe for farming.
Two of the major mines of Ethiopia are located near Shakiso: the Lega Dembi gold and the Kenticha tantalum mines
The Kayon Moutain farm is owned by multiple families that have been born and raised in coffee. This farm boasts a 500 hecatare spread of which half is planed in heirloom typica coffee and the other part of the land is reserved for cabbage and indigenous shade trees.
In 2015 they installed coffee washing stations and dry- hullers allowing them to start exporting their own coffee and now see an annual production of about 300 tonnes of lovely coffee.
These wonderful coffees seen an average fermetation time of 24-36 hours, followed by a drying time of 12- 20 days.
Looking in the future, Kayon Mountain Farm plans to plant more coffee and continue to improve the quality of their processing.
