Roaster notes: " This is the coffee given to the competitors to brew at the recent Simplify Cup brewing Championship 2024.  It has a light red plum fruitiness, honey sweetness and milk chocolate mouth finish".
This very lovely coffee lot is from the district of Huabal in Jaen province, Cajamarca.  All of the coffees were home processed, meaning they were picked, processed, and dried by the individual producers.  
Once picked the coffee cherry is floated, usually in ceramic or wooden tanks, before being rested overnight and then pulped and fermented the next day.  After 24 to 48 hours of fermentation (the time depends on the climate in the area and time of harvest), the coffee is washed and then set out to dry. Many of the producers in Huabal now have raised beds and covered, parabolic driers, which have sprung up in the last few years and
have greatly improved the quality of the coffees in the area.
In Huabal, a region celebrated for its vibrant coffee industry, Caturra, Catimor, Bourbon, and Typica are key coffee varietals contributing to the area's diverse cultivation. Caturra, prized for its compact size and high-quality beans, offers a bright acidity and balanced flavour. Catimor, a disease-resistant hybrid, introduces robust earthy undertones.  Bourbon, known for its rich taste, contributes to the region's nuanced flavour profiles.  Together, these varietals showcase the diversity and excellence of Huabal's coffee offerings, combining local expertise and optimal growing conditions.
