The Art of El Diviso Processing:

Linarco's innovative processing methods are key to El Diviso's exquisite flavor profile:

  1. Selective Harvesting: Only the finest coffee cherries are hand-picked.
  2. Initial Fermentation: 18 hours in their harvest bags at the on-site wet mill.
  3. Anaerobic Fermentation: Cherries are pulped dry, then undergo 60-72 hours of controlled fermentation in sealed plastic bins.
  4. Careful Washing & Resting: A light wash followed by an 8-hour rest to perfect moisture content.
  5. Extended Drying: 20-22 days in a dedicated drying area ensures optimal humidity.
  6. Flavor Stabilization: A crucial 15-20 day rest in GrainPro bags allows the coffee to fully develop its unique characteristics.
