La Serrania Decaf is grown along an isolated set of mountains within the central cordillera of the Andes that tower over Pitalito, Acevedo, Palestina, Timana, and Suaza. This coffee really showcases the work of the local coffee producers. All of whom are committed to quality and excellence.
The coffee is carefully hand sorted on site and processed at each individual farm where special attention is paid to the sensitive drying process to ensure consistency across the coffee. This results in the lovely uniformity of this coffee and a wonderful clean cup profile.
The decaffeination process uses ethyl acetate derived 100% from sugar cane mixed with mountain water, removing 99.7% of the caffeine naturally present in the coffee. This process is awesome for preserving all of the original flavours within the coffee.
